CHEAP AND EASY RECIPES: WINTER WARMTH SOUP

This recipe is made with fresh vegetables and spices, so it’s a vibrant departure from typical canned soup. - 1 tablespoon oil
- ½ small onion, diced
- 2 cloves garlic, diced
- ½ cup carrots, chopped
- 1 cup mushrooms, sliced
- 1 zucchini, chopped
- 1 teaspoon italian seasoning
- 1, 14.5 ounce can of diced tomatoes
- 4 cups vegetable broth
- 2 cups spinach
- ¼ cup basil, chopped
Step 1: Heat oil in a large pot over medium heat
Step 2: Saute onion, garlic, carrots and celery until tender
Step 3: Add zucchini, seasoning, tomatoes and broth, and bring to a simmer
Step 4: Reduce heat to low and cover for 25 minutes
Step 5: Add spinach and basil. Cook for five minutes
Step 6: Add salt and pepper
