By: Rachael Buselmeier   I’m going to let you in on a little secret. Trader Joe’s sells pizza dough for a dollar and it is both vegan and delicious. I personally prefer the garlic herb flavor, but classic is great too. This week, I decided to have a pizza making party so I picked up five bags of dough, enough for ten people. For sauce, I made pesto and vegan cashew cheese, a few of my friends brought purchased tomato sauce. Cashew Cheese 2 cups raw cashews soaked for at least 2 hours ¼ cup nutritional yeast 1 lemon, juiced ½ tsp salt ¼ tsp paprika ¼ cup water  

  1. Allow the cashews the soak as long possible, warm water works best.
  2. Drain the cashews and add to the blender with the rest of the ingredients.
  3. Blend until the cashews create a smooth creamy texture.
  Pesto 2 cups fresh basil 3 tbsp lemon juiced ½ cup pinenuts or almonds ¼ cup nutritional yeast ½ tbsp salt ¼ cup olive oil ¼ water or as needed  
  1. Blend until a spreadable paste is formed.
  I asked my guests to bring toppings and also threw in some of my own. We had quite a spread, everything from arugula to potatoes to fresh heirloom tomatoes. The greater the variety and novelty of your toppings, the more fun your party will be.

Spread the dough on greased cookie sheets and let guests get creative adding sauce and toppings. When the masterpieces are finished bake them in a 450F oven for 15-20 minutes. As you and your guests enjoy some pizza, I recommend listening to The Pizza Underground. The band covers The Velvet Underground’s greatest hits with pizza themed lyrics. Although they sound pretty good, their lyrics will have you laughing.
