Easy, delicious and nutritious, these spring rolls are the perfect college meal on-the-go. The recipe is my own concoction and a staple in my lunchtime routine. With fresh ingredients high in vitamins and fiber, these rolls are powerful ammunition against cold season. Feel free to roll up any combination of ingredients to fit your taste. The best mixes I’ve tried involved a grain, protein, crunchy vegetable and soft/wet ingredient.

Ingredients:

  • 4 rice paper wraps
  • ½ cup quinoa
  • 4 teaspoons of hemp seeds
  • Chopped basil
  • Baby kale
  • Sprouts
  • Tofu (or your favorite protein)
  • 1 avocado, sliced
  • Favorite salad dressing or dipping sauce

Directions:

Step 1: Mix quinoa, hemp and basil in a small bowl and set aside Step 2: Soak rice paper wrap, one at a time, in hot water until fully cooked and pliable for about 30 seconds

Step 3: Lay out rice paper wrap and fill with quinoa mixture, kale, sprouts, tofu and ¼ avocado Step 4: Wrap it up like a burrito and dip in your favorite sauce What do you think about this recipe? Leave a comment below.
