CHEAP AND EASY RECIPES: STRAWBERRY SHORTCAKE OVERNIGHT OATS

“Let them eat cake (for breakfast)!” is a motto all students should adopt to make those early morning classes just a little bit sweeter. No matter when you have class, having a dessert themed breakfast ready to go in the fridge is a pretty great way to start the day! This recipe is a simple make-ahead meal that will provide you with enough nutrients to tackle the longest days, and allow you to spend a little extra time cozy in bed.

Ingredients:

  • ½ cup rolled oats
  • ½ cup milk (any variety)
  • 1 container of strawberry yogurt
  • 1 teaspoon sweetener (honey, agave or sugar)
  • ½ cup sliced strawberries
  • 1 crumbled graham cracker sheet for garnish

Directions:

Step 1: 
Add all ingredients, except the graham cracker, to a mason jar. Step 2:  Secure with a lid and shake. Step 3:  Refrigerate overnight. Step 4:  Top with graham cracker crumbles and enjoy!

Insider Tip:

Swap out the flavor of yogurt and pair with a matching fruit to mix it up. Some of my favorites are peach, cherry, blueberry and pumpkin spice. Add a teaspoon of pumpkin pie spice or cinnamon with this combo.
