CHEAP AND EASY RECIPES: HASSELBACK CHICKEN

I have to admit, I do not cook for myself as often as I should. I have been trying to fix this lately and one recipe I have come across is called hasselback chicken. I found this recipe on my Facebook feed from the cooking page Proper Tasty and it has become one of my favorites. Here is the video of the recipe. The chicken is stuffed with spinach and ricotta and topped with cheddar cheese. For someone who is not a seasoned cook, this is an easy and filling meal to make. I live alone, so I make one portion, although it could be easy to make more.   What you’ll need:

  • One boneless, skinless chicken breast
  • One handful of spinach
  • ½ cup of ricotta cheese
  • Salt
  • Pepper
  • 1 cup of shredded white cheddar cheese
  • Paprika
Step 1: Start by preheating the oven to 400 degrees. Step 2: Lay the raw chicken breast on a cutting board horizontally and slice multiple sections without cutting all the way through the breast.

Step 3: Put a pan on the stove over medium heat. Add spinach to the pan until it slightly wilts, then add the ricotta. Stir the mixture for about two minutes, until all spinach is completely wilted. Step 4: Transfer the cut chicken onto a baking pan. Take a spoonful of the spinach and ricotta and put it in a slit of the chicken breast. Continue this until the mixture is in every section.

Step 5: Sprinkle salt and pepper over the chicken, then add the shredded cheddar on top. Finish by sprinkling with paprika.

Step 6: Put the baking sheet in the oven and cook for 25-30 minutes. In my experience, the chicken is finished after 25 minutes. Although this dish is pretty filling as is, I like eating it with another vegetable to make the meal complete.
