Cheap and Easy Recipes: Pasta Bake

Time is precious for college students who are juggling busy schedules and don’t have much time to spend cooking elaborate meals. This recipe is quick, easy and makes several servings! It’s also highly customizable, so feel free to make substitutions for any of the ingredients. I love making meals like this because I can cook it on a Sunday and reheat leftovers during the week.

You’ll need:

  • 2-3 cups of pasta
  • ½ jar of marinara sauce
  • 1 cup of broccoli
  • 1 tomato
  • ½ bag of baby spinach
  • ¼ bag of shredded mozzarella cheese (about 4 oz)
  • 1 veggie Italian sausage link (Trader Joe’s has really good ones, as does Haggen. Real sausage works too of course!)
  • Olive oil
Step 1: In a large pot bring water to a boil, add a bit of olive oil, and cook the pasta. When the pasta is almost soft, toss in the broccoli and spinach and finish cooking. Drain the water and set aside. Step 2: Grab a small saucepan and lightly brown the veggie sausage with a bit of olive oil. Set aside and cut into bite sized slices. Step 3: Preheat the oven to 350℉ and grab a clean baking pan. I’d recommend a rectangle 13x7 one. Step 3: Combine the pasta, veggies, marinara sauce and sausage in your pan. Add a diced up tomato. Top with as much cheese as you’d like, at minimum I’d recommend about 4 ounces, but the cheesier the better! Step 4: Bake for about 15 minutes and enjoy!

If you don’t have any of these ingredients you would probably need to spend $10-$15, but you’ll have a lot of leftover ingredients and food.
