Cheap and Easy Recipes: Quesadilla

You really can’t go wrong with quesadillas, so here is one of my favorite recipes for a quick snack or meal. It’s fast and the great thing is that it is totally customizable; feel free to try out different fillings such as onions, peppers, mushrooms or chicken.

You’ll need:

  • 1 flour or corn tortilla
  • A handful of shredded cheddar cheese (If you don’t eat dairy then I recommend the vegan “Daiya cheddar style shreds”)
  • ½ of an avocado
  • ½ of a tomato
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • Optional: Vegetables or meat for filling (Broccoli is one of my favorites)
  • Cooking oil
Step 1: Cut open a ripe avocado and spoon out half of it onto a small plate or bowl. Mash the avocado with a fork or spoon. Step 2: Dice the tomato into small pieces, mix with the avocado and add the seasonings to your liking. Step 3: Prepare a saucepan with cooking oil, heat to medium-high. Step 4: While the pan heats up, spread the avocado/tomato mixture on the tortilla, sprinkle with cheese, and add any other fillings. Step 5: Fold it in half, place in the pan and cook on both sides until the cheese is melted and the tortilla is cooked to your preferred crispiness level!

For about $10 you can get all the ingredients that you need and have enough tortillas, cheese and veggies to make multiple servings later on. You can serve it with salsa or sour cream, or even make a side of cilantro lime rice for a nice meal.
